A&D are proud of their land, their people & their wines. Tirelessly they pursue care & improvements in the vineyards, respecting the local biodiversity. They believe this is the way that they will achieve excellence in the wines they produce.

The preservation of the eco-system, water, biodiversity & producing grapes with minimal human intervention. All of these are a priority to A&D, with their aim being to produce natural terroir wines. The vines are cultivated in an organic, sustainable way, located between 180 & 400 meters of altitude. 

Supporting local communities, from which they choose their workers who are trained in the principle of appreciating what is authentic & original in the region. This way they boost the sustainability of this project, not only for now but being aware both of the legacy they received from previous generations & of their responsibility towards the future ones. 

Monólogo are monovarietal wines, produced from selected parcels of the vineyard. Showing the terroir of each parcel, each year, an individual expression of areas in the vineyard. In order to do so the minimal intervention in the winery is limited to the surveillance of a healthy process of natural fermentation.

  • MONÓLOGO AVESSO 2022

    AND1-W - Minho, Vinho Verde - Avesso - 12.5%

    Produced in Quinta de Santa Teresa, with grapes from the P67 parcel, this Monólogo is made from Avesso, the typical variety of Baião.

    Winemaking Process: The must ferments in stainless steel vats at low temperature. Stabilization & gentle filtration take place. No animal derivate is used in the process, making it a vegan-friendly wine. Special care was taken in this process, minimizing any impact, with the intention of producing a wine that expresses the particularities of the grapes & the terroir only.

    Tasting Notes: This wine shows a fresh aromatic profile, with notes of white flowers, thyme & a citric side to it, particularly passion fruit carapace. On the palate smooth & silky notes of guava & pear, along with a well-adjusted acidity. It will age well in bottle.

    Serving Temperature: 8-10°C

    Food Pairings: Perfect with fresh flavours such as Greek salad, white fish with lemon & garlic prawns.

  • MONÓLOGO P706 CHARDONNAY 2021

    A&D2-W - Minho, Vinho Verde - Chardonnay - 12.5%

    Produced in Quinta de Santa Teresa, with grapes from the P706 parcel, this Monólogo is a monovarietal wine with a complex & elegant profile.

    Winemaking Process: Hand-selected & destemmed, before going through skin contact processing & pneumatic press. The must ferments in stainless steel vats at low temperature. Stabilization & gentle filtration take place. No animal derivate is used in the process, making it a vegan-friendly wine. Special care was taken in this process, minimizing any impact, with the intention of producing a wine that really expresses the characteristics of the grapes & the terroir.

    Tasting Notes: This wine shows expressive vegetal aromas, along with notes of white asparagus & custard apple. On the palate this Chardonnay is big & round, with notes of guava, avocado & physalis. Great volume in the mouth, smooth acidity.

    Serving Temperature: 9-10°C

    Food Pairings: The perfect partner to caesar salad, a selection of grilled seafood or salmon, or traditional pub food “ham, egg & chips”!

  • QUINTA DE SANTA TERESA - AVESSO UNFILTERED 2022

    AND4-W - Minho, Vinho Verde - Avesso - 12.5%

    Quinta de Santa Teresa is born from the will to produce an Avesso wine with longer extraction, unfiltered, from a selected vat & chosen for this purpose. This vinifying method obtains a wine with a certain rusticity, great volume on the palate & high ageing potential.

    Winemaking Process: The must ferments in oak for 12 months. Stabilization takes place, with no filtration. No animal derivative is used in the process, making it vegan-friendly. Care & attention was taken during the process to minimize the impact, therefore producing a wine with amazing intensity & mouthfeel. This Avesso is a wonderful example of the grape & the terroir.

    Tasting notes: This wine shows diverse citric notes & a floral side, namely linden & orange blossom. On the palate we find an expressive volume, carrying weight & character on the mid-palate. A wine with a round character, well refined, which keeps on tapering through the palate, starting with a certain rusticity but finishing smooth & elegant, showing pleasant notes of core fruits. It will age very well in bottle.

    Serving Temperature: 10-12°C

    Food Pairings: Amazing with anything & everything! But goes goes especially well with creamy fish pie, raclette & fresh grilled fish.

  • MONÓLOGO ARINTO 2021

    AND5-W - Minho, Vinho Verde - Arinto - 12.5%

    This wine initially exhibits a slightly closed aromatic profile, which then opens to re- veal citric and mineral notes, typical of the granitic soils it originates in. On the palate it presents itself fresh and tender, with notes of papaya, lantana and silica, finish- ing nicely. It will age well in bottle.

    Tasting notes: On the nose, we find notes of thyme, lime and orange blossom. On the palate it shows good volume along with a vibrant acidity which holds throughout the tast- ing, granting structure and precision to the wine. It will age well in bottle.

    Winemaking process: Grapes arrive to the winery in 24kgs boxes. They are hand-selected and destemmed, before going thru skin contact process and a gentle pneumatic press.

    Food Pairings: Arinto pairs well with lightly spiced dishes like Indian or Thai curries, or dishes with a bit of heat like spicy tuna rolls.
