Bodegas Pinoso was established in 1932. As pioneers of ecological wine production, using sustainable production techniques back in 1997 & dedicated to improving the fertility of their soil.

Dedicated to increasing the biodiversity of local ecosystems & by using recycled cardboard for their boxes to improve the environment further still. Most of their range is Organic and Vegan, bypassing pesticides in favour of natural methods & substituting traditional fining agents such as gelatine with bentonite & vegetable proteins. 

Regardless of their eco-warrior status, the area is also influenced by its proximity to the Mediterranean Sea, with 300-400 mm/year of rainfall and plenty of sunlight (2,500 – 3,000 hours per year). Causing stress to the vines which gives them their unique character. Leading to structured wines, with intense colour & huge aromatic potential. Their wine is a true reflection of team spirit, eco-responsibility & constant innovations.

  • Vergel White - 2020

    PIN1-W Cork - Alicante - Airén & Sauvignon Blanc - 13%

    This wine is the result of old Airén vines, a Spanish indigenous grape variety, cultivated in the traditional way in non-irrigated vineyards, and Sauvignon Blanc, of which yields were controlled (less than 0,50 kg/vine) to obtain maximum concentration & aromatic complexity. All attention was dedicated to respecting the natural environment and terroir, using organic agriculture & hand picking during the cooler hours in the morning in order to preserve the grapes´ integrity, but also to limit the risks of oxidation. After a smooth pressing & delicate racking of the must, fermentation is started with indigenous yeasts in order to display the typical characteristics of the area. For aromatic expression, the temperature is controlled daily. The fermentation is followed by the process of leaving the wine on fine lees for several weeks.

    Tasting Notes: Pale yellow with golden reflections. Aromas of ripe fruit (peach, apricot, guava), white flowers and spices (ginger, white pepper) and hint of butter. Powerful, sweet & broad on the palate. An elegant wine, with traditional in mind, yet modern in style.

  • Vergel Rosé - 2020

    PIN1-RS Cork - Alicante - Monastrell - 13%

    This modern organic rosé wine is for people who love to try something new. This is due to its expressive personality & incomparable taste. Using Monastrell exclusively offers a daring, elegant wine full of freshness & vivacity. Bent on being different, unique and authentic. Bunches of grapes are transported directly to a press where a soft pressing occurs before undergoing a soft racking. The fermentation is then carried out at a controlled temperature of 14-16 °C to create a bursting acidity.

    Tasting Notes: Translucent pink with purplish hints. Expressive, aromas of strawberries, raspberries, melon which develop themselves in a range of exotic fruits. Fresh & elegant palate. Thirst quenching with a long & pleasant finish.

  • Vergel Red - 2020

    PIN1-R Cork - Alicante - Monastrell, Merlot & Alicante Bouschet - 14.5%

    Selecting our best organic grapes, Monastrell & Merlot are kept separate to extract a typical quality from each. The Merlot lends aromas of pepper, black fruits & a truffle influence. Whilst Monastrell lends the quality of it’s Mediterranean climate, making the wine softer yet fruit forward. The third variety is Alicante Bouschet (also called Garnacha Tintorera). To achieve the maximum flavour from the grape, it is harvested very early in the morning & then used with selected special yeasts that support its character. The skins & pips are macerated at a very low temperature for a short time, so that excessive tannins do not appear. The result is a red wine of a beautiful ruby colour & intense fruit aromas, with very ripe soft tannins.

    Tasting Notes: Vibrant red colour shows youth, together with a brilliant violet border.

    Notes of red & black fruits mixed with sweet aromas of flowers intermingled. Round & warm, easy drinker, with a lingering finish.

  • Cepa 50 Red - 2020

    PIN3-R Cork - Alicante - Monastrell - 14.5%

    History & tradition define this wine made exclusively from organic Monastrell grapes, which is the indigenous variety of the region. From their oldest vines at 45 years. Which with no irrigation & large temperature changes putting stress on the vines, create a roundness beyond its years. When every bunch of grapes reaches its optimum stage of ripeness, the grapes pass through a very soft de-stemming and crushing process. The temperature is maintained at 22°C during the first days of fermentation in stainless steel tanks & afterwards it is increased to 28°C until fermentation is finished. The lower temperature preserves flavours of fresh fruits, while the following higher temperatures helps to maximize intensity of the colour & extraction of ripened tannins.

    Tasting Notes: Ruby red with blue overtones. Aromas of ripe fruits, plums, cherries, mineral notes with a spicy, vanilla background. Mildness & balance is emphasized together with velvety, flavoursome tannins. A wine of surprising richness, capable of displaying the nuances of Pinoso.

  • Diapiro White - 2020

    PIN2-W Cork - Alicante - Merseguera - 13%

    Pinoso are bringing back a very peculiar grape variety named Merseguera, traditionally grown in the region. For this project, bush vines from limestone soils, located at more than 650 meters altitude have been used. Controlled yields barely supported by the Mediterranean-Continental climate. Once the hand-harvesting has been carried out during the very early hours of the day, the grape juice is then macerated with its skins at 8°C for 6-8 hours. Part fermented in stainless steel at 14°C on thin lees, whereas the other part is fermented in new French oak barrels. This is to keep the fine floral freshness & to get a very balanced & harmonious wine.

    Tasting Notes: Yellow with golden tones & fresh notes of white flowers, grapefruit, fennel, mint & peach. Fresh with notes of apricot, bitter almond, grapefruit & mint. Mediterranean character, balanced acidity, with a long, elegant finish. Pairs well with white roasted meat, sushi, risotto, aged cheese & cold meats.

  • Diapiro Red - 2019

    PIN2-R Cork - Alicante - Monastrell, Tempranillo & Merlot - 14.5%

    The fusion of old Monastrell vines from the side of the Cabezo de la Sal mountain, producing very few grapes, combined with the fresh fruit character of Tempranillo & the concentration of Merlot. Coming together to make a full bodied yet balanced wine.

    Throughout the cold winter, the wine rests in concrete tanks that are almost a century old, where they take shape & mature. 4 months in new French oak barrels give it toasted cocoa quality. A complex, elegant wine in memory of the winemakers from whom they inherited the passion for their land.

    Tasting notes: Dark cherry base with a deep red finish. Subtle aromatic herbs, fennel & eucalyptus, with bold ripe red fruit. Full bodied, with fine silky tannins. Moving to a creamy toasted, balsamic finish. Pairs well with grilled red meats, roast beef & tuna steak. Desserts such as quince jelly with cheese or chocolate fondant.
