Domaine Parpalhol is before anything a story of 2 friends focused on a common passion for authentic wines and symbols of Languedoc treasures. First, there is Julien. Following a winemaking scholarship in Montpellier, he takes over the family estate in 2006. He follows his father’s footstep, a local man who used to sell to the village cooperative. Julien learned with Jean Michel Alquier but also at Domaine Trevallon, a star from Provence. Serge comes from the restaurant business. After 20 years abroad, his passion for wine comes true through several studies such as Wine University in Suze la Rousse in France, the famous Swiss Changins wine school and at last the WSET in 2015.

The Parpalhól Estate covers near 30 hectares, surrounding Béziers and Corneilhan. An exceptional landscape already planted by Romans centuries ago. Selecting the best grapes varieties Languedoc can offer, Syrah, Grenache, Mourvèdre for their red wines, Cabernet Sauvignon, Chardonnay, Marsanne, Viognier, Sauvignon et Colombard for the white Parenthèse.

Convinced by the necessity and value of their environment, Parpalhól choose organic viticulture and are Ecocert Certified since 2015. As we are aware that every little details counts, this is why vines are grown in Cordon de Royat style, with grass cover every second row in order to preserve biodiversity in the soil. Harvests takes place early mornings in order to pick up grapes the coolest as possible and we make sure teams get freshly brewed morning coffee! Grapes are then stored in cold rooms before going to pneumatic press.

With Sophie Brun’s help and advise, as she consults with some of the most famous Terrasse du Larzac estates, Parpalhól search for the perfect balance and excellence in their wines to show the best the terroir can offer.

The Crown jewel of the Languedoc Region

  • Parenthése Rouge

    PAR1-R - 55% Syrah and 45% Grenache - IGP PAYS HERAULT - 14%

    Winemaking Process:

    Cultivated in clay, limestone, and pebble soil, this typical Languedoc blend comprises 55% Syrah and 45% Grenache noire sourced from 25-year-old organic-certified vines. The grapes, harvested between August 25th and September 5th, undergo meticulous sorting before maceration in thermoregulated vats for 20 to 25 days. The vinification process includes gentle "pigeages," and the wine is aged for 6 months in vats, featuring vegan fining and low sulphites protection during bottling, with an aging potential of 2 to 5 years.

    Embodying the essence of Languedoc, this wine offers a delightful fusion of black fruits and spices on the nose. Its well-structured, supple palate leads to a long, velvety finish, creating an easy-drinking, hedonistic experience suitable for a wide range of palates.

    PAR1-W - 70% Chardonnay, 20% Viognier, 10% Sauvignon - IGP PAYS HERAULT - 13%

    Winemaking Process:

    Parenthèse 2022 IGP Pays Hérault is a harmonious blend crafted with precision and care. The vineyards, featuring limestone, clay, and pebbly soils, contribute to the unique character of this wine. The vines, aged 20 years and certified organic, bear witness to a commitment to sustainable practices. The blend comprises 70% Chardonnay, 20% Viognier, and 10% Sauvignon, each varietal adding its distinct qualities to the final composition. Harvested between August 3rd and 15th, the grapes undergo a meticulous vinification process. After a pneumatic press, the juice is cold-stored for 48 hours, promoting optimal flavor extraction. Natural filtering in cold temperatures and 6 months of aging in stainless steel vats further refine the wine. Vegan fining and low sulfates protection at bottling ensure the preservation of the wine's natural qualities.

    Pale gold with greenish reflections Aromas of ripe stone fruits, tropical hints, and a touch of citrus create an enticing bouquet. The wine offers a refreshing palate with notes of pineapple, peach, and a zesty citrus twist. The Chardonnay contributes a subtle richness, while Viognier adds floral complexity and Sauvignon enhances the vibrant acidity. The finish is crisp and invigorating.

    An embodiment of Languedoc's richness, this wine emanates scents of cassis, tobacco, and spices. Its velvety, refined palate unveils supple tannins and a seamlessly smooth finish. Ideal for red meats, its enduring quality promises longevity in the cellar.

    Winemaking Process:

    Cultivated in limestone, clay, and pebble soil, this wine arises from 25-year-old certified organic vines. Vinification involves a 24 to 28-day maceration of grapes in controlled temperature vats, employing minimal "pigeage" for gentle extraction and preserving freshness with natural yeasts. Aging occurs with 50% in vats and 50% in 2-year-old French oak barrels for 8 months.

    This versatile wine complements red meats impeccably, enhancing the flavors of hearty dishes such as grilled steaks, roast lamb, or rich beef stews.     PAR3-R - 55% Syrah, 35% Cabernet Sauvignon, 10% Grenache - IGP PAYS HERAULT - 14%

    Winemaking Process:

    'Princesses 2021' originates from 30-year-old organic vines in IGP Pays Herault, benefiting from limestone, clay, and pebble soil. A blend of 55% Syrah, 35% Cabernet Sauvignon, and 10% Grenache undergoes meticulous sorting, destemming, and 20-25 days of maceration. Aging for 14 months in 300L oak barrels with vegan fining.

    Tasting Notes:

    A deep ruby color introduces 'Princesses 2021', revealing an intricate blend of red and dark fruits, subtle herbs, and spices. Ripe berries, blackcurrant, cherry, and a hint of licorice adorn the palate, with velvety tannins providing a smooth texture. The finish balances oak and fruit complexities.

    Food Pairing:

    Pair 'Princesses 2021' with grilled lamb, herb-roasted beef, or vegetable-based dishes like ratatouille and roasted mushroom risotto.
